Spring is in the air providing new energy with refreshing and bold recipes to wet your palate. Cilantro, lime and mint are all wonderful ingredients that can be used to compliment your chicken, lamb or fish dishes, infusing them with immense flavor. Cilantro Marinade: 1 bushel cilantro, 1 clove garlic, 1/4 cup onion, 1 tsp cumin, 1 tsp oregano, 1 tsp. of mint,2 tsp lime juice.

Directions:

Place all ingredients in the blender and blend well. Spread over meat of your choice. Allow to marinate overnight for maximum flavor or a minimum of 1 hour if your doing the same day.
